Bitter Gourd chutney (Karathe kismuri)

Bitter gourd chutney is known as karathe kismuri in Konkani. Bitter gourd consists lot of health benefits. It is an excellent source of Vitamin C and  is very low in calories. It stimulates easy digestion. It has the ability to lower blood glucose in diabetics. Coming back to the recipe, this recipe is of my  late mamama’s(maternal grandmother). She used to prepare the best Karathe Kismuri.Thank you mamama for  sharing with  us your authentic recipes.


Bitter gourd-1 (chopped into small squares)
Coconut-1/2 cup
Coriander seeds -2tsp
Long red chillies(fried)-4
Short red chillies (fried)-2
Tamarind-marble sized
Onions-4 chopped finely
Green chillies-2
Salt –to taste
Oil – as much as needed to deep fry
Oil-3 tsp
1)Apply salt to the bitter gourd and keep it aside for 2-3 hours.
2)Then the squeeze all the water from it  and deep fry till brown and crisp.
3)Grind the ingredients from coconut to tamarind.
4)Don’t add water while grinding.
Add few tbsps of water only if required.
5)Let the masala be coarse.
6)Take oil in a pan and fry onions till light pinkish in color.
7)Next add the masala and fry for 5-10 minutes.
8)Lastly add fried bitter gourd,green chillies  and salt  and saute for few minutes.

1)You can chop more bitter gourds and deep fry and store it for many months.
2)You can also add fried bitter gourd,raw onions,green chillies  to the raw masala.
3)The reason to fry all the things is the chutney stays for a longer time and you can store for 3- 4 days.
