This is again a Konkani preparation.I have given the basic Fry paste recipe already,so by using the same paste we do this preparation.You may use any veggies of your choice.This is best served as a starter or an accompaniment with the main course.Generally we say phodis in Konkani for fries.We,GSB’s love anything that is deep fried.So any occasion you’ll get to see any one of the phodi’s in the menu.Even cauliflower phodi tastes good.I will update with other phodis in the coming days.So until then enjoy this dish.
Drumsticks(mashinga sanga)-cut into index finger size
Jackfruit(Kadgi)-cut as shown in picture
Bittergourd(karathe)-cut into round pieces
Kantola(phagil)-Cut as shown in the Picture
Green brinjals(Gulla)-cut as shown in picture
Fry paste to marinate-as much as needed
Rice flour-to dust
- Wash and cut the veggies.
- Marinate with salt and Fry paste.
- Dust it in rice flour and deep fry in hot oil until crisp and brown.
- You may also dip the marinated veggies in fine semolina and deep fry.
