Maavinkayi chitranna

My husband had brought lots of ripe Mangoes from our factory garden and ever since my daughter saw that she wanted to eat Maavinkayi chitranna desperately.Immediately I called up Santoshi and asked the recipe and it seemed to be so easy peasy and I had some leftover rice in the fridge which I had prepared for Veg schezwan fried rice and that made my job more easier.I was surprised my Amchi food lover hubby also relished it to the core and I was damn happy.Again, today I prepared it for the breakfast on popular demand. Maavinakayi chitranna is a popular dish of  Bangalore and is little bit tangy to taste. Maavinkayi means ripe mango.This recipe which I adapted is very easy,I have one more recipe which I will post in the coming days.



Ingredients:
Basmathi rice-1 ½ cups
Ripe mango-1 cup,peeled and grated
Green chilly-4
Salt-to taste
Sugar-a pinch
Turmeric powder-1/4 tsp
Asafoetida-a pinch

To temper:
Ghee-1 tbsp approx
Mustard seeds-1 tsp
Split black gram dal-1 tsp
Cashewnuts or groundnuts-15 bits
Curry leaves-few

Method:
  1. Cook the rice until stiff and firm,don’t over cook,cool it completely before you use.
  2. Heat ghee in a pan,temper mustard seeds,once it splutters add all the tempering ingredients,simmer and add turmeric powder and asafoetida.
  3. Add the grated mango and green chilly and saute for 5 minutes.
  4. Add cooked rice,salt to taste and sugar,mix it well and close the lid for sometime.
  5. Serve hot.
