Potato chips

Potato chips is the favourite  timepass snack of almost everyone.Salted potato chips is best served at  the  kids party and spicy ones are best savoured as the evening snack or parties.Its fun to savour the chips while watching the movie, you’ll never realize the empty plate.Its  been a while since I prepared the chips.Few days back I  bought a grater cum chips maker which has rippled impression and I could use it easily.Ever since I had bought it  I was desperately waiting to try the potato chips using that impression.There are different methods to prepare the chips.Santoshi’s mother who is an excellent cook used to give us sun dried potato chips,which we used to deep fry as and when we wanted.This method below is the simplest one.Potato chips are always a hit snack.No one can eat just one.




Ingredients:
Potatoes-1 kg or as much as needed
Oil-to deep fry(1 1/2 cup approx)


Spice mix:
Salt-to taste
Pepper powder-as per taste
Chilly powder-as per taste(1/4 tsp approx)



Equipment:
Chips maker



Method:
  1. Mix the spices like salt and chilly powder or salt and pepper powder and keep it aside.
  2. Wash the potatoes thoroughly,peel it and wipe it thoroughly with a clean towel.
  3. Heat the oil until it smokes.
  4. Meanwhile grate the potatoes in the chips maker and spread it in a clean towel and wipe out any extra moisture.
  5. You may also drop the gratings into the oil directly.
  6. Now drop the grated chips one at a time without crowding in the oil on a  medium flame and then higher the flame.
  7. Use a slotted spoon and fry the chips until light and crispy on both the sides.
  8. Transfer it into a colander where kitchen napkin is spread to absorb the excess oil.
  9. After 5 minutes  add the spice mix as per your combination and mix it lightly.
  10. Store it in an airtight container.
  11. You may add only salt to the chips too.
  12. You may use a regular chips maker or slice the potatoes into thin slices and deep fry if you do not have a grater.
