Carrot Kheer

Carrot Kheer,the name itself sounds so yummy.This was in my list since a long time and I had bookmarked few recipes in the recipe book and had forgotten completely.Today in the food group after I saw Asha Satish Phillar Mayi’s post I could not resist and prepared it immediately.I added custard powder to get a thicker consistency as aunty had mentioned in the title of her post.This recipe was just an experiment but was successful.It tasted yum..Happy Eid dear readers!




Ingredients:
Carrot-2,chopped
Milk-2 1/2 cups
Sugar-3/4 cup or to taste
Custard powder-3 tsp,diluted in milk
Cardamom powder-1/4 tsp
Mixed nuts-2 tbsp,roasted in a tsp of ghee(I added cashewnuts and almonds)


Method:

  1. Peel and chop the carrots into round pieces.
  2. Pressure cook it for 2-3 whistles until it gets cooked.(Add water until it soaks).
  3. Cool it completely and puree it.
  4. Boil the milk,add sugar and dissolve it.
  5. Add carrot puree and diluted custard powder and take a boil until it thickens.
  6. Cool it and blend it in a blender for a smooth consistency.
  7. Garnish with roasted nuts,cardamom powder and serve chilled.
My notes:

  • You may also add Kesar(saffron).
  • You may also substitute sugar with milkmaid.
  • You may also blanch almonds,peel,paste it and add to the kheer.
  • I added sugar sprinkles for decoration.
