Pundi

Pundi is another version of our very own  Undi/ Oondi. But this is prepared without coconut. This is a all time favourite at our place especially kids love this very much. The preparation is very simple . December is one of my favourite month of the year as I love Christmas and baking . I had thought of sharing a bake recipe and when I was searching the pictures I found this picture and thought of sharing this recipe as soon as possible before I forget it. This compliments well with groundnut chutney. Marwai Pundi is also a speciality of the Mangalorean Bunt community. Marwai is clam and pundi is served with clam sukha and together it is called as Marwai pundi.

Ingredients:

Dosa rice – 1 cup

Water – 2.5 cups

Cooked white rice – 1/4 cup

Salt – to taste

Sugar -1 tsp

Oil – 2 tsp

Method:

  1. Wash the rice well and spread it in a cloth.
  2. After 10 minutes powder it coarsely.
  3. Grind the cooked rice to a smooth paste.
  4. Boil water, add the rawa little at a time just before water starts boiling.
  5. Add cooked rice, salt , sugar and oil.
  6. Keep cooking it until starts coming together to a whole mass.
  7. Cool it for sometime, apple oil or water to you palms and make balls of the desired size.
  8. Steam it for 20- 25 minutes.
  9. Serve it with groundnut chutney.

Groundnut chutney:

Ingredients:

Roasted skinless groundnut – 1 cup

Long red chilly – 2-3

Tamarind – pinch

Garlic – 5 cloves

Onion -1 ,chopped

Oil – 1 tsp

Salt – to taste

Method:

  1. Saute onion and garlic in oil until it fades.
  2. Grind all the ingredients together to a smooth paste.
