Cheese Masala Pav,A popular street food of Mumbai

I’m visiting this zone after a long gap.Most of us love chaats,do you?Well, I tasted this recipe for the first time recently when Santoshi prepared it for the evening snacks.She adapted this recipe from Aparna Bhats blog who partly followed Tarla Dalal’s recipe and I followed it too.You may also check A cook at heart blog also. This is a popular Mumbai street food.This pav reminds me of Dabeli very much and I love both..Today is Teachers day and I dedicate this post  to all my teachers and to all the teachers in the world.

Recipe adapted from:Flavors and colors




Ingredients:
Pav or laddi pav- 4 packets(Pack of 4,makes 16)
Ingredients for the masala:
Onions-2,finely chopped
Tomatoes-,finely chopped
Capsicum-1 1/2 ,chopped
Garlic-3-4,grated
Turmeric powder-1/4 tsp
Red chilly powder-2 tsp or to taste
Everest Pav Bhaji Masala Powder-2 1/2 tsp
Lemon juice-2 tbsp
Butter-1tbsp
Coriander leaves-handful,finely chopped
Oil-2 tsp
Salt-to taste
Butter-3 tbsp approx to apply for the pav(I used home made butter)

For garnish or stuffing:
Cheese -5-6 cubes grated(I used Gouda cheese)
Nylon sev-1/2 cup approx
Onion-1,chopped finely

Method for the masala:

  1. Heat oil and butter in a pan,saute onions until translucent.
  2. Add capsicum and saute further for few seconds.
  3. Add grated garlic and tomatoes and saute until tomatoes gets mushy.
  4. Add pav bhaji masala and all the powders and saute for a minute.
  5. Cook till all the masala blends well.
  6. Lastly add lemon juice,coriander leaves and mix it.
  7. Keep the masala dry.


How to proceed:

  1. Take the laddi pav,slit it carefully in between,keeping both the pieces intact and apply butter on both sides.
  2. Smear the masala inside the pav.
  3. Sprinkle sev all over the masala.
  4. Spread chopped onions.
  5. Finally spread grated cheese.
  6. Press the stuffed pav lightly.
  7. Heat a tawa and roast the stuffed pav on both the sides.
  8. Serve it hot.









My notes:
  • Originally,the buttered bread is toasted first and then the  stuffing is filled.
  • Santoshi says we may prepare  the stuffing part and refrigerate for a day,roast it whenever we want.
  • You may also keep everything ready in the morning and final roasting part can be done in the evening or snack time when the kids come back from school.
  • You may also prepare this pav without cheese.
  • I used Pomegranate only for decoration.
