Rice kheer

This is a quick version of Rice Kheer. I prepared this on my better half’s birthday last week.I had condensed milk in my pantry and there was cooked basmathi rice ready as we consume the same daily. I adapted shortcut this time after all those Diwali sweets hangover.You may also add vermicelli or cooked tapioca pearls as a combination with this kheer. Can be refrigerated and used until a week.I garnished the kheer with tutty fruity for a change.


Ingredients:
Cooked basmathi rice-2 cups approx
Condensed milk- 1 tin
Milk-3/4 L
Cardamom powder-1/4 tsp
Vanilla custard powder-3 tbsp diluted(optional)
Saffron -few strands soaked in a tsp of milk
Cashewnuts-10-12 bits,broken and roasted in a tsp of ghee


Method:

  1. Boil milk in a vessel,add cooked rice and condensed milk.
  2. Mix it well,take a boil,add diluted custard powder,saffron and cardamom powder.
  3. Garnish with roasted nuts and serve it hot or cold.
  4. Rice kheer is ready.
