Broccoli soup

Hello dear readers! Today I will share one more interesting recipe which we prepare at our place often. It is Broccoli Soup. Soup is a favourite in the family. We all love soup. They are healthy and nutritious. Broccoli is easily available these days and is one the healthy vegetable. 

Ingredients:

Broccoli florets-  2 cups

Milk – 2 cups approx

Onion – 1 , chopped

Garlic – 2-3 flakes

Herbs – to season

Sugar – to taste

Pepper powder – as per the taste

Salt – to taste

Method:

  1. Heat butter and saute garlic and onion.
  2. Keep it aside.
  3. Blanch broccoli florets in salted water.
  4. Reserve few pieces and puree the rest with onion and garlic.
  5. Transfer it in a sauce pan.
  6. Add milk and water and adjust the consistency.
  7. Add salt to taste, sugar, pepper powder and herbs.
  8. Take a  boil.
  9. Garnish the reserved broccoli pieces.
  10. Serve it hot.

My notes:

You may also add grated cheese to make it rich.
