Dal Makhni

Hello dear readers! Today I will share an interesting dal recipe. Dal is one of the comfort food. It compliments well with rice and roti. I’ve been following this recipe from quite sometime and is a favourite of all. This is Nita Mehta’s recipe from her book ‘Dal and Roti’.

Ingredients:

Whole urad dal -1 cup

Chana dal – 2 tbsp

Rajma – 1/4 cup

Ghee – 2 tbsp

Water – 5 cups

Whole red chillies – 2

Curds – 1/4 beaten

Garam masala – 1 tsp

Nutmeg – 1/4 tsp , grated

Ginger garlic paste – 1 tbsp

Tomatoes – 4, puree it

Kasoori Methi – 1 tbsp

Coriander powder – 2 tsp

Butter – 2 tbsp

Cream – 1/4 cup

Salt – to taste

Method:

  1. Grind ginger, garlic and red chillies together to a paste.
  2. Clean and wash dals, pressure cook it along with rajma, salt , 1 tbsp ghee, water and half of ginger garlic paste.
  3. After the first whistle keep it on low flame for 20 – 25  minutes.
  4. Heat remaining ghee, add tomato puree , cook it until ghee separates and turns thick.
  5. Add curd and cook it until ghee separates and until the colour changes.
  6. Add the leftover ginger garlic paste, garam masala powder and coriander powder.
  7. Add this mixture to the cooked dal and add butter.
  8. Simmer for 8 – 10 minutes, stirring occasionally.
  9.  Add cream and jaiphal.
  10. Serve hot.
