Cheesy Mushroom Caps

Cheesy mushroom caps makes one of the excellent starter.My sister Durga suggested me about this dish many a times but somehow I wasn’t confident to go ahead.But this time when hubby dear had brought fresh mushrooms and this recipe from cheries stolen recipes fell into my eyes and I tried it immediately.The dish was cheesy infused  with garlicky flavor  and it was  fingerlicking good.This recipe is a keeper.The spinach mushroom sauce which we prepared here can be used to prepare pasta which I tried successfully.You may also stuff the mushroom ahead and bake it when required.I used processed cheese but you may also use Mozzarella cheese.

Ingredients:
Mushroom -200 g
Spinach -1 small bunch
Green chillies -2,finely chopped
Garlic -2 -3 tbsp,finely chopped
Coriander leaves – 2 tbsp,chopped finely
Butter – 2 tbsp +1 tbsp
Flour -1 tbsp
Milk – 1 cup
Cheese – 1/2 cup,grated
Salt – to taste
Pepper – to taste


Method:

  1. Wash the mushroom well and remove the stem carefully.
  2. Finely chop the stem .
  3. Heat a pan,add butter and saute chopped garlic and fry for few seconds on low flame.
  4. Add chopped green chillies and coriander leaves and saute for half a minute.
  5. Add chopped spinach and saute for few minutes.
  6. Add flour and fry for a minute.
  7. Add milk and mix it well.
  8. Cook it until the sauce starts to thicken.
  9. Add salt and pepper to taste.
  10. Turn off the flame and keep the stuffing ready.
  11. In another pan heat a tbsp of butter and saute mushroom on high flame adding little salt.
  12. Mushroom will release lot of water,keep it on high flame and cook it.
  13. Cook it until the water evaporates.
  14. Once done,place it on a baking tray.
  15. Add a tbsp of filling carefully.
  16. Top it with grated cheese. 
  17. Preheat the oven at 180 d.c.
  18. Bake it in the oven for 10 minutes until the cheese melts.
  19. You may also stuff the mushroom directly and bake. *
  20. Serve it hot.







My notes:
  • I tried both the methods of stuffing mushroom
  • I prefer sauteing mushroom first and then stuffing it, as stuffing mushroom directly will release water while baking and it will take more time to bake.
